When a cheese is made by hand, a series of essential processes are carried out so that the final result is a unique and special product. Coagulation, cutting and extraction of whey, pressing, salting, maturation are the traditional artisanal production processes, unchanged since its origins. During the process, care, care and respect for natural waiting times are essential to achieve a perfect final product.
In the artisan production, one by one, it is the master cheesemaker who is in charge of selecting the main material, the main ingredient: milk. It is almost always chosen from a single livestock source. These are unique jewels, with their own essence and personality.
