The pico-lemon/cacereña olive is characterized by being a large fruit with a characteristic taste between sweet and bitter. Pico Limón olive has mixed use, with good characteristics for the production of table olives and a valued olive oil.A very complex flavor, full of nuances. It is an olive with a fruity flavor, with hints of fresh grass and olive leaf, hints of apple and notes of spicy taste. All this gives it the distinctive touch that is so appreciated on the table and in its oil. The Pico Limón/Cacereña olive has mixed use, with good characteristics for the production of table olives and a valued olive oil, with a curious peak at the tip, which gives it its name. It is an olive with a characteristic taste between sweet and bitter, cracked and seasoned with spices, garlic and pepper.

Preparation

Purple picolimon/cacereña olives are used. They are preserved in maintenance brine, desalted before packaging. The containers are inspected beforehand and 1 clove of garlic and 1 bay leaf is added to the bottom of each. The olives are mixed with red pepper before packing. Once the container is filled with the mixture, it is completed with the broth.
